Leftover Roasted Potatoes? Make a Breakie Bowl!

These little bowls are easy to make for 1 or more!

Breakie Bowl Goodness

Easy to make, I threw this together from leftovers on New Year's Day for a brunch for 2.


You'll need as many ramekins (small baking bowls) as you have people. Preheat oven to 365.

  • Potatoes (I used 3 small yellow potatoes I had roasted a few nights before), chopped into small pieces

  • 2 Green onions (scallion), sliced

  • 2 slices bacon (one for each person)

  • 2 eggs

  • Garlic breadcrumbs (leftover from cooking for clients)Sal

  • Salt and pepper to taste

Heat pan on high to start the bacon cooking - do not crisp it all the way, make sure you can still form it in the ramekin, bending it around the outside.


Wipe most of bacon grease out of pan, but leave some to brown the potatoes in.


Wipe the ramekins with olive oil or some of the bacon grease. Put in the sliced onions, then smooth the almost-crisp bacon around the edge of the ramekin. Add 2 eggs. Bake until eggs are done to your liking - 20 minutes for very runny, 30+ for done.

Garlic Breadcrumbs

  • 1 cup panko breadcrumbs

  • 3 tbsp butter - unsalted

  • 4 cloves garlic, minced

In a sauce pan, melt butter. In a bowl, mix garlic and breadcrumbs well. Add to pan, cook on medium heat until browned. Sprinkle on top of Breakie Bowls - or anything else you'd like (great on roasted veggies like zucchini).
