Here's a kitchen trash recipe I created from a couple of my personal chef client's leftovers. Delicious, fast, creamy pesto! YUM!
INGREDIENTS:
Sweet Kale Pesto Recipe (1/2 cup)
Siggis 0% Fat Plain Yogurt (1/2 cup)
Chopped lacinato kale (2 cups) & lemon juice (2 lemons), macerated (smash lemon juice into kale
Garlic olive oil (2 tblspns olive oil and 3 minced cloves of garlic,microwaved for 30 seconds in a small bowl)
Pasta of your choice, cooked al dente for 4 people
Parmesan Cheese to sprinkle on top
Pepper
In a bowl, stir together the Sweet Kale Pesto, the plain yogurt, the warmed olive oil and the garlic olive oil.
Wilt the lacinato kale and lemon juice in the microwave for 1 minute
After cooking the pasta of your choice for 10 minutes until al dente, drain and mix with creamy kale yogurt sauce and the wilted kale.
Sprinkle with Parmesan cheese and cracked black pepper, serve and ENJOY!
Sweet Kale Pesto
1 cups chopped lacinato kale
1/4 cup olive oil
1/2 lemon, juiced
2 garlic cloves
1 whole bunch fresh basil
1/2 teaspoon salt (or a pinch with your fingers)
Put in a food processor or blender, and puree all ingredients - makes for a great topping or condiment for pastas, meats, fish and sandwiches.

I have made a beautiful kale ceasar salad for my weekly dinner clients, and had the leftover macerated kale in lemon juice in the fridge. Some of my clients that night had ordered a side of Kale Bucatini, a wonderfully simple pasta dish I make for them. I only had a little of the Sweet Kale Pesto leftover, and it wasn't enough for a meal, and I was HANGRY after a day of cooking.
Hence, Creamy Kale Pesto Pasta was born! Let me tell you, I will be making it from scratch for my clients. They will love it!
