Citrus Baked Cod

This light and healthy main dish is the perfect quick meal in about 15 minutes!




Low Carb Deliciousness

Buttery citrus sauce brightens up this dish.


  • 1lb cod

  • ½ jalapeno pepper, diced, remove seeds (can use whole, but it will be SPICY)

  • 1 bunch scallion, diced, whites and greens separated

  • 2 tablespoons fresh cilantro, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons melted butter

  • 2 limes, juiced

  • ¼ cup dry white wine (Sauvignon Blanc)

  • 2 teaspoons salt and pepper

You will need:


  • Slice cod into 4 even pieces and place into baking pan

  • Drizzle with 1 tablespoon olive oil and rub 2 teaspoon salt and pepper all over fish

  • In a small bowl, mix melted butter, lime juice, cilantro, scallion/green onion whites, dry white wine, 2 tablespoons olive oil and diced jalapeno and set aside

  • Place glass baking dish with cod in 1000w microwave for 3 minutes, turn over, add the butter and citrus from small bowl, microwave for 4 or 5 more minutes, until fish is done to your liking. Timing will vary depending on thickness of cod.

To serve, place on plate with some salad greens, and sprinkle salt, pepper and scallion greens on top. Accompany with a side salad or steamed broccoli
